Tortillas

I LOVE this recipe. I have tried a few different recipes for tortillas and they never turn out right. I got this recipe from a friend in Ann Arbor. They turn out perfect if you put the dough in the refrigerator for a while before cooking them. Lately I have been making a lot of dough and putting it in the fridge. Whenever we need tortillas I just use some of the dough and put the rest in back in the fridge. Here is the recipe.

Servings: 32

5 cups flour (1/2 whole wheat if you want)
1/3 cup shortening
1 tsp. salt
1 tsp. baking powder
2 cups water

Combine everything except the water. Knead together with hands or beaters until well mixed. Add about 2 cups warm water until dough sticks together and will not stick to hands. Divide into egg size balls, roll out, throw to stretch. Cook in cast iron or heavy aluminum dry pan, hot and quick. Do not over cook.

For (15) tortillas use:
3 cups flour
3 Tbsp. shortening
1/2 tsp. salt
1/2 tsp. baking powder
1 cup water

Tacos with a twist

I made these tonight and they turned out really good. They are really simple—basically hard-shell tacos with a little bit of a twist, but I thought they were quite tasty!

Apricot Chicken

Okay this recipe is kind of made up, but Becky asked for it so here it is:

3-4 frozen chicken breasts
1 small jar salsa
1 packet taco seasoning
1 cup apricot jam

cook all of this in the crock pot until the chicken shreds. In the last hour add 1 can of black beans rinsed and 1 can of corn. And your done! Then I serve it like taco salad with chips, lettuce, tomato and all of the fixings.

Crock Pot Fajitas

I'm pretty picky about my crock pot recipes but this one is really good!

http://www.stacymakescents.com/fix-and-forget-friday-crock-pot-chicken-fajitas

Crock Pot Chicken Fajitas

1 yellow onion, sliced
3 sweet peppers, sliced
1 ½ pounds boneless chicken breast or thighs
1/4 to ½ cup chicken broth, depending on preference (leave this out if you prefer a drier fajita filling)
½ teaspoon salt
2 tablespoons cumin
1 ½ tablespoons chili powder
Squirt of lime juice
Tortillas
Fajita fixings

Combine sliced onion and peppers in the bottom of a greased crockpot. Lay chicken on top of veggies. Pour chicken broth over top. Sprinkle everything with cumin, salt, and chili powder. Give a nice quirt of lime juice over the top. Cover and cook on low for 4-8 hours (or on High for 4 hours) or until meat is shreddable. When meat is done, shred with two forks and stir back into juices. Serve meat mixture with slotted spoon on tortillas with your choice of fixings.

Chalupa

I remember mom making this when I was in high school. Someone in my ward shared this recipe with me and I tried it today. I am looking for any kind of yummy crock pot meal I can get right now so if any of you want to post some of your favorites I would really appreciate it. :)

1 lb pinto beans (dried)
2-3 lb. pork roast
7 cups water
1/2 cup chopped onion
2 minced garlic cloves
1 Tbsp. salt
2 Tbsp chili powder
1 Tbsp. cumin
1 tsp. oregano
14 oz. green chili

Put everything in a large crock pot and cook on low for 8 hours. We served it with chips, lettuce, cheese, tomatoes, sour cream, and salsa. Avocados would also be super yummy on top.

Mexican Tortilla Wraps

This is one of my favorite finger foods to take when I need to take food to a party or something. They are really easy to make and super tasty.

Ingredients:
2 cups of shredded cheese (I used a Mexican mix).
1 package (8 oz) of cream cheese, softened
4 oz of chopped black olives
4 oz of chopped green chilies
Salsa to taste (sorry, don't have an exact amount)
1/2 a bunch green onions, sliced

You mix everything together, and then spread it onto flour tortillas. Roll up the tortillas, refrigerate, and slice.

Yummy Mexican Dish

I made these two recipes last night for dinner. They went really well together. I thought I would share. I used mild Rotel tomatoes for the beef and original for the salsa. The salsa had a little kick to it.

Enchiladas From Favorite Family Recipes

You guys HAVE to try these enchiladas. Don't ask questions, just try them

http://www.favfamilyrecipes.com/2011/08/honey-lime-chicken-enchiladas.html

I didn't make mine in the crock pot. I just boiled the chicken in the ingredients with extra water and a boyon cube. When it was cooked, I shredded it, and put it back in the sauce for a little while.

I served it with mango salsa I threw together:

2 ripe mangos (you know they are ripe if they are soft)
some red onion
1/2 a jalapeno chopped
1 green pepper
juice of one lime
Cilantro

yum!
