  • 1 tablespoon olive oil
  • 3 sprigs rosemary

  • 8 bone-in, skin-on chicken thighs

Apricot Chicken

Okay this recipe is kind of made up, but Becky asked for it so here it is:

3-4 frozen chicken breasts
1 small jar salsa
1 packet taco seasoning
1 cup apricot jam

cook all of this in the crock pot until the chicken shreds. In the last hour add 1 can of black beans rinsed and 1 can of corn. And your done! Then I serve it like taco salad with chips, lettuce, tomato and all of the fixings.

Crock Pot Fajitas

I'm pretty picky about my crock pot recipes but this one is really good!

http://www.stacymakescents.com/fix-and-forget-friday-crock-pot-chicken-fajitas

Crock Pot Chicken Fajitas

1 yellow onion, sliced
3 sweet peppers, sliced
1 ½ pounds boneless chicken breast or thighs
1/4 to ½ cup chicken broth, depending on preference (leave this out if you prefer a drier fajita filling)
½ teaspoon salt
2 tablespoons cumin
1 ½ tablespoons chili powder
Squirt of lime juice
Tortillas
Fajita fixings

Combine sliced onion and peppers in the bottom of a greased crockpot. Lay chicken on top of veggies. Pour chicken broth over top. Sprinkle everything with cumin, salt, and chili powder. Give a nice quirt of lime juice over the top. Cover and cook on low for 4-8 hours (or on High for 4 hours) or until meat is shreddable. When meat is done, shred with two forks and stir back into juices. Serve meat mixture with slotted spoon on tortillas with your choice of fixings.

This is a MUST Try!!

I made this recipe tonight for roast chicken and it was amazing!!! There is even a video to watch and she shows you how to do it. I used dried thyme and only half the garlic because I didn't want to use a whole clove. Also, I used quartered red potatoes and I didn't have any fennel. Anyway, it was amazing and you all should make this recipe. Lastly, I don't have any cooking twine so I looked up that you can use a heavy duty thread instead. Enjoy.

Chicken Tikka Masala

I got this recipe from a girl from my mission a few years ago and when I made it for Grandma Cindy she said I should post it.  It looks like a lot but is fairly quick and easy.  This is the girl's blog amysep.blogspot.com

1/2 c. Greek yogurt
1 1/2 tsp. lemon juice
1/2 tsp. cinnamon
1 tsp. cumin
1/2 tsp. cayenne pepper
3/4 tsp. freshly ground pepper
1 tsp. salt

mix together and marinade 2 breasts of chicken cubed for 1 hour
heat 1 tsp. olive oil in a pan and cook marinated chicken until the yogurt evaporates, set chicken aside.

1 1/2 tsp. butter
2 garlic cloves minced
3/4 tsp. cumin
1/2 tsp. paprika
1 small can tomato sauce
1/4-1/2 c. heavy whipping cream
2 Tbsp. fresh chopped cilantro
Naan bread or Basmati Rice

melt butter in the same skillet, saute garlic for 1 min.  Season with cumin and paprika.  Stir in tomato sauce and cream.  Simmer on low until sauce thickens.  Add chicken and cilantro.
Serve over Basmati rice or with Naan Bread (Both are at Trader Joe's) I like the brown Basmati rice or the whole wheat Naan Bread. This is a little spicy but so good!

Winger's Sticky Finger Wraps

Okay, out here in Payson, AZ we are somewhat restaurant deprived. I found a recipe for sticky fingers and we made copycat wraps tonight for dinner...all we were missing was the popcorn!

8-12 breaded chicken tenders
Sauce:
1 1/2 C. brown sugar
6 Tbs. Frank's hot sauce
4 Tbs. water

Bake chicken according to package directions.
Heat up ingredients for the sauce on the stove top.
Pour sauce over chicken tenders once they are baked.

Place sticky fingers in a tortilla and top with lettuce, tomatoes, cheese and ranch.
We had ours with baked sweet potato fries and celery sticks.

BFF White Bean Chilli

I first made this with Katie Halverson when I was up visiting Seattle. It has since become one of my favorites...and Corlan's too. Hope you guys like it!

1 C onion chopped
2 garlic cloves minced
2 chicken breasts baked and shredded
1 (14.5 ounce) can chicken broth (I normally end up adding more)

1 (4 ounce) can green chilies (I really like green chillies so I add more)
1 tsp dried oregano
1 tsp cumin
monteray jack cheese
cilantro chopped

1. Cook onions, garlic, and chicken in oil
2. Mix remaining ingredients together except cheese and cilantro
3. Cook on stovetop until flavors are mixed

BBQ Chicken

This one is super fast, easy, and yummy! And you only need 3 ingredience!

4 (or so) Frozen chicken breast
1 can Pinapple chunks
BBQ sauce

Put it all in the crock pot at the same time on high 2-3 hours or low for 4-6 hours. I put it on rice and it was super good. You can also add veggies like canned corn or black beans, that is what Brandon did and he liked it.
This also came from pinterest

My Favorite Chicken Pesto Pasta

So I have made this so often that I kind of just make up my own measurements and add however much I want of everything. You need:

Spagetti noodles
Chicken 1-2 pieces
1 Jar artichoke hearts (cut up)
1 Jar pesto
Sun dried tomatoes
Spinach
And last night I added bacon and it was way yummy!

Cooking instructions:

Start by cutting the chicken into cubes and then cooking them on a skillet. Once the chicken is fully cooked add the artichoke hearts, spinach, and sun dried tomatoes. saute it all together until the spinach in no longer fluffy :) Then add the jar of pesto to the noodles.

When I serve it I usually keep the noodles and veggies separate because it is easier to work with. I hope you like it!

Amy's Sticky BBQ Chicken Drumsticks...

Amy informed me that when she needs to make a meal for someone, these are what she makes. And without fail people tell her how much they love them. She has become famous in Ann Arbor for them. I tried them a couple of months ago and Corlan has been requesting them ever since.

There' a good summer meal!

Ingredients:
4 large chicken drumsticks
1/2 tsp vegetable oil
1 small onion chopped
1/2 c brown sugar
Juice of 1/2 a lemon
1/2 T Worcestershire sauce
4 T ketchup
1 T white wine vinegar

1.  Make marinade by heating oil in skillet, add the onion, and saute until soft. Stir in the sugar and cook gently for 1–2 minutes. Add the remaining ingredients and simmer for 5 minutes.

2. Pour the mixture into a glass ceramic bowl, add the drumsticks, and marinate for at least 30 minutes and up to 12 hours.
3. Transfer the drumsticks to a baking dish, baste well, and place under a preheated broiler. Cook for 20–30 minutes, turning every 10 minutes and basting with the barbecue sauce. Check that they are cooked through, wrap the ends in foil, and serve hot or cold
